Easy, Healthy and Cheap
I’m on a little bit of a health kick after having taken the advice to ‘support local small business’ by ordering take away a little too seriously during the first few months of the COVID-19 crisis.
As such, I have been trying to ensure I cook as many meals from home as possible, in order to both save money and get a better handle on my eating habits. While some nights I surprise myself with relatively intricate dishes, on others it’s nice to have an easy, healthy and affordable fall back for when you just can’t be bothered.
So here’s my recipe for a quick, easy and cheap healthy dinner:
Brown rice, 1 serving (however much you want really). Its high in fibre leaving you fuller for longer and I quite like the starchy texture.
Veggies – whatever you like. I tend to always have a bag of carrots in the fridge, so I like to chop them up into thin circles like coins and then fry them in a pan with plenty of garlic, a little bit of oil and some herbs. I then add a leafy green, either kale, spinach or bok choy to give it some volume and substance, before adding a little bit of soy sauce and lemon juice over the top for flavour.
Then, finish off your dish with a protein of your choice. Eggs are a great, cheap and easy option, no matter how you like to cook them. I tend to go for chicken which is a little bit more work, and salmon if I’m feeling particularly flush with funds for the week.
Season to taste and you’ve got yourself an easy, healthy and cheap dinner meal!
